Meatless Mondays – Dirt & grass salad

Oh no, Monday again! And that means meatless Mondays and me running late with a post… so I apologize that for some of you it will be meatless Tuesday! Oops, and a third recipe with chickpeas in it??? Is that some kind of diagnosis? Mild obsession? Anyway, you should try this any day and even if you had chickpeas the day before, the simplicity and yumminess of this dish will blow your mind. It was one of the evenings when I got home after yoga class and my mind was blank. I had no clue what to cook, but also had no will to spend ages in the kitchen or order some crappy food and negate all the effort I had just made at the yoga class. I opened the fridge, assessed the situation and came to conclusion that bulgur and micro greens had been there for too long and need to be used. Hm, and all tastes better with tomatoes… and halloumi… and maybe chickpeas? Let’s mix it all up and see if Todd will eat it… He did. I did too. And few times after already. It’s the best thing I made from things I needed to use and it’s also healthy! Todd called it a ‘Dirt and grass’ salad. And he was right – this meal looks so earthy and rich, like if it was created to give you the best nutrition in the world. And it tastes the same. I really hope it will become a regular item on your list of fast and healthy diners, it really deserves it :) And yes… there is lime and pepper in it. Life would be really boring without lime and pepper :)


Och nie, opäť pondelok! A to znamená bezmäsité pondelky a nestíhačky s príspevkom… takže sa ospravedlňujem tým, pre ktorých to už bude bezmäsitý utorok. Ups, a tretíkrát recept s cícerom? Je to nejaká diagnóza? Jemná posadnutosť? Každopádne, tento recept by ste mali vyskúšať bez závislosti na tom, aký je deň a či ste mali cícer deň predtým, tá jednoduchosť a chutnosť tohto jedla vás totiž uchváti. Bol to jeden z tých večerov, keď som prišla domov po hodine jógy a v mojej mysli bolo prázdno. Netušila som, čo uvariť a zároveň som nemal vôbec náladu stráviť hodiny v kuchyni, no ale ani objednať si nejaké nič moc jedlo, ktoré by znegovalo všetky snahy vyvinuté na jóge. Takže som otvorila chladničku, zhodnotila situáciu a prišla k záveru, že bulgur a mikro šalát v nej boli už pridlho a tak sa musia zjesť. No a všetko chutí lepšie s paradajkami… a halloumi… a možno cícerom? Čo tak to všetko zmiešať a zistiť, či to Todd zje? Zjedol. A ja tiež. A od vtedy už viackrát. Je to najlepšia vec, akú som kedy urobila z ingrediencií, ktoré som musela minúť, a ešte k tomu to je aj zdravé! Todd ho nazval šalát Zemina a tráva. A trafil sa – toto jedlo je také poctivé a bohaté, ako keby bolo vytvorené len preto, aby vám dodalo tú najlepšiu výživu an svete. A tak aj chutí. Naozaj dúfam, že sa stane pravidelnou položkou na zozname rýchlych a zdravých večerí, pretože si to naozaj zaslúži :) A áno… je v tom limetka a korenie. Život bez limetiek a korenia by bol naozaj nudný :)

“Dirt & Grass salad” ~ Šalát Zemina a tráva

2 small cups of bulgur ~ 2 malé šálky bulguru
2 medium sized tomatoes ~ 2 stredne veľké paradajky
2 handfuls of micro greens ~ 2 hrste mikro šalátu
1/3 can of chickpeas ~ 1/3  plechovky cíceru
60g of halloumi (can be replaced by feta) ~ 60g halloumi (môže sa nahradiť fetou)
juice from 1/2 of lime ~ šťava z 1/2 limetky
olive oil ~ olivový olej
black pepper ~ čierne korenie

Cut halloumi into slices and grill. Divide bulgur, diced tomatoes, micro greens and chickpeas into two bowls. Mix well and season with olive oil, lime and black pepper. Put grilled halloumi on the top and eat!


Nakrájajte halloumi na plátky a ugrilujte. Rozdelte bulgur, nakrájané paradajky, mikrošalátik a cícer do dvoch misiek. Dobre premiešajte a ochuťte olivovým olejom, limetkou a čiernym korením. Na vrch dajte ugrilované halloumi a jedzte!
