Huevos rancheros

Living with Todd made me exposed to a different breakfast world. Pancakes with bacon and maple syrup, breakfast burritos… really big cooked meals to eat for breakfast! Difficult to compare to Slovak standards of bread with ham and cheese, or jam, scrambled eggs… Usually we don’t eat big breakfast, but this week we were dreaming about  Mexican inspired breakfast to make during the weekend. And since our brunch plan was cancelled, here they are – huevos rancheros by Todka :)

Vďaka bývaniu s Toddom som vystavená úplne odlišnému raňajkovému svetu. Palacinky so slaninou a javorovým syrupom, raňajkové burritá… naozaj veľké varené jedlá na raňajky! Ťažko sa to porovnáva so slovenským štandardom chlebu so syrom a šunkou alebo lekvárom, praženice… Zvyčajne nejedávame veľké raňajky, ale tento týždeň sme snívali o Mexikom inšpirovaných raňajkách, ktoré by sme si spravili cez víkend. A keďže naše plány na brunch sa dnes zrušili, tu sú – huevos rancheros podľa Todky :)

 

Huevos rancheros

For two people ~ pre dvoch ľudí:

2 flour tortillas ~ 2 tortilly
2-4 eggs (depending on how hungry you are) ~ 2-4 vajcia (podľa toho akí ste hladní)
50g of grated cheese (we used gouda) ~ 50g nastrúhaného syra (my sme použili goudu)
bacon (optional) ~ slanina (ak máte chuť)
1/2 can of beans (pinto or red kidney beans, optional) ~ 1/2 plechovky fazule (pinto alebo červenej fazule)

For salsa ~ na salsu:
1/2 of avocado ~ 1/2 avokáda
2 small tomatoes ~ 2 malé paradajky
1 small chopped shallot ~ 1 malá nasekaná šalotka
juice from 1/2 of lime ~ šťava z polky limetky
salt ~ soľ
pepper ~ korenie

To prepare salsa, cut avocado and tomatoes into small cubes and mixed them with chopped shallot. Add juice from half of a lime and season with salt and pepper to your liking. Let sit for the flavors to mix while you prepare the rest of the breakfast.
Heat up your pan and the reduce the flame to minimum. Put the tortilla on the pan, and after one minute flip the sides. Add grated cheese on top and crack 1-2 eggs on top. Let cook for 2-3 minutes and then flip the whole thing for the eggs to cook. This part can be messy, since the egg is still runny, so be careful. Cook another 1-2 minutes and it’s ready!
We added some bacon and beans to our breakfast, but those are not necessary and it’s up to your preference. If you feel like them, just fry bacon on the pan until crispy and for beans, mash them in a bowl and afterwards heat them up for few seconds on a pan. Put all the goodness on a plate and enjoy!

Na salsu, nakrájajte avokádo a paradajky na malé kocky a zmiešajte s nasekanou šalotkou. Pridajte šťavu z polky limetky a dochuťte soľou a korením. Nechajte chute premiešať, kým pripravíte zvyšok raňajok.
Ohrejte panvicu a následne znížte plameň na minimum. Ohrejte tortillu na panvici a obráťte na druhú stranu. Na vrch dajte nastrúhaný syr a rozbite 1-2 vajíčka ako keby ste pripravovali volské oko. Varte okolo 2-3 minút a obráťte na druhú stranu, aby sa vajíčka uvarili. Táto časť môže byť trošku komplikovaná, keďže vajíčka sú stále z časti surové, takže buďte opatrní. Varte ďalšiu minútku, dve, a hotovo!
My sme si k raňájkám pridalil aj trošku slaninky a fazule, ale tie nie su nevyhnutné a závisia len od vašej chute. Ak na ne máte chuť, upražte si slaninku do chrumkava a fazule popučte v miske a následne ich na pár sekúnd ohrejte na panvici. Dajte všetky tieto dobroty na tanier a dobrú chuť!

    • Haha, yes, all is better with bacon :) I’m a bacon baby – while my mum was pregnant with me, she was addicted to bacon, so tell me about it :)) But in fact, this really doesn’t need bacon, it’s tasty without it, so even vegetarians can try it out :)
